ABOUT THE CHEF

Having carved a quietly unorthodox path, Chef Nileshkumar Christian’s culinary journey has taken him from the markets of Gujarat to the coastal kitchens of Kerala, the tribal spice trails of the Northeast and finally onto London, with each stop adding depth, fire, and finesse to his singular cooking style.

It was in London that he crossed paths with fellow Indian chef Surat, a kindred spirit equally obsessed with the untapped corners of Indian cuisine. Together, they form a formidable duo; part culinary explorers, part cultural archivists, and the driving force behind Rajdhani Express: a series celebrating the lesser-known dishes, flavours and spices of India, far removed from your standard curry house fare. No butter chicken here. 

With Rajdhani Express, Nilesh and Surat are setting the table for something different, "some of these flavours you won't find on Brick Lane; bold, brilliant, and unapologetically Indian.
